I am a dessert lover. From cookies, to chocolate, to brownies to cake – you name it and I love it!
We all know the negative impact that consuming too much sugar or processed foods can have on your body, so I am always on the look out for new and fun ways to hit that sweet spot and satisfy my sweet tooth. I visited my local freshii last month and tried one of their new Peanut Butter Energy Bites and fell in love. I wanted to try to find a way to make these at home with some items that I already had in my pantry and I was pleasantly surprised at how easy and versatile these little bites can be! You can add whatever delicious seeds and nuts that you have on hand and it will always come out just as delicious. Not to mention they are super easy to make and require no baking! Need I say more?
2 cups Gluten Free Rolled Oats
2 tbsp Chia Seeds
2 tbsp Hemp Seeds
2 tbsp Sunflower Seeds
2 tbsp crushed, Slice Almonds
2 tsp Cinnamon + more to taste! (I love my Cinnamon…)
4 tbsp Raw Dandelion Honey or Natural Maple Syrup
1/2 cup All Natural Peanut Butter (or Almond Butter!)
1/2 cup Dark Chocolate Chips
✦ In a large mixing bowl, combine Oats, Seeds, Almonds & Cinnamon. Mix to combine.
✦ Melt your All Natural Peanut Butter until slightly runny. Add Peanut Butter, Honey to the Oat & Seed mixture.
✦ Add Dark Chocolate Chips and mix to combine.
* You want this mixture to be wet enough to be able to roll into a ball but not wet enough that it is overly sticky on your hands. If you find your mixture is too dry, add more Honey or Peanut Butter. If you find your mixture is too wet, add some more oats to soak up the moisture.
✦ Line a baking sheet with parchment paper and roll mixture into balls.
✦ Place in the fridge for 30-40 minutes. Store in an airtight container in the fridge.
Remember: If you do not have these exact ingredients, get creative and use what you have! If you don’t have honey, use Maple Syrup or Agave. If you don’t have Peanut Butter, use another nut or no nut butter, or soak and use some dates. If you don’t have Dark Chocolate Chips, add Shredded Coconut. The possibilities are endless.
