Cocoa & Nut Date Bars

It is finally Spring in Toronto, but once Spring starts that also means some crazy weather!  I have been feeling like I have been getting sick for the past week or so, and with all this fluctuating weather (+12 to -2 to +4 in a matter of days),  it has finally caught up with me.

I’ve been staying home and lazing around today when I felt the sudden urge to get off my butt and make something in the Kitchen.  I have been living off of soup so these No Bake Date Bars are just what I needed and only took 15 minutes to prepare!  I will definitely be making these for my family Easter coming up soon, and I hope you do too!

No Bake Cocoa & Nut Date Bars: 
Ingredients:
1 package Medjool Dates (approx. 20 dates)
1 cup Raw Unsalted Cashews
1 cup Raw Unsalted Peanuts 
1/2 cup Raw Unsalted Almonds
3/4 cup Raw Unsweetened Cocoa Powder
1/2 cup Unsweetened Shredded Coconut 
1 tbsp Vanilla Extract 
Sprinkle of Sea Salt 
3 tbsp Water (depending how dry your dates are) 
Optional: Extra Shredded Coconut and Almond Butter for Garnish 

Directions:
✦ Pit dates and cut in half.  Put into food processor with Cashews, Peanuts, Almonds.  Pulse until roughly chopped.
✦ Add in Shredded Coconut, Vanilla Extract, Sea Salt, and 1 tbsp of Water.  Pulse until it begins to bind together.
✦ If texture is still a bit dry, add 1 tbsp and pulse until the mixture begins to stick together, but is not wet.   You are aiming for a mixture that will hold its shape without becoming wet.
✦ Once you get your desired consistency, put into a square or rectangular baking dish and spread and push down until compact.  Optional: Sprinkle with Shredded Coconut and drizzle Almond Butter over the top.
✦ Refrigerate for 1 hour, cut into bars or squares. Enjoy!
